Delicious cookies that capture the essence of pecan pie in a chewy oatmeal base.

  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup chopped pecans
  • 1/4 cup corn syrup
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 egg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the egg and vanilla extract until well combined.
  4. Mix together oats, flour, baking soda, and salt in another bowl.
  5. Gradually blend the dry ingredients into the wet mixture.
  6. Stir in the chopped pecans and corn syrup until well combined.
  7. Drop spoonfuls of dough onto a lined baking sheet.
  8. Bake for 10-12 minutes or until the edges are golden brown.
  9. Let cool before serving.

Notes

For chewier cookies, consider adding an extra egg yolk. Store in an airtight container for up to a week or freeze for longer storage.
