A delightful twist on breakfast, this Peanut Butter Waffle Cake features soft, fluffy waffles layered with creamy peanut butter filling and drizzled with chocolate.

Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/2 cup melted butter
  • 1/2 cup peanut butter
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1/2 cup chocolate chips

Instructions

  1. Whisk the dry ingredients in a large bowl until nicely combined.
  2. Beat together the eggs in another bowl, then mix in milk and melted butter until smooth.
  3. Carefully fold the wet ingredients into the dry mixture until just blended.
  4. Preheat your waffle maker according to the manufacturer’s instructions until hot.
  5. Whip the heavy cream with powdered sugar until soft peaks form, then fold in peanut butter.
  6. Pour the batter onto the waffle maker and cook until golden brown; repeat until all batter is used.
  7. Stack the waffles with peanut butter cream between each layer.
  8. Melt chocolate chips in the microwave and drizzle over the assembled cake, then slice and serve.

Notes

For added texture, consider adding chopped nuts or bananas between the layers. Store leftovers in an airtight container in the fridge for up to 3 days.
