Deliciously soft chocolate cookies filled with creamy peanut butter, perfect for satisfying your sweet tooth.

  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Combine the all-purpose flour, cocoa powder, baking soda, and salt in a bowl.
  3. Mix the granulated sugar, brown sugar, and vegetable oil in another bowl.
  4. Incorporate the eggs and vanilla extract to the sugar mixture and mix well.
  5. Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated.
  6. Drop spoonfuls of dough onto a lined baking sheet.
  7. Bake for 10-12 minutes until cookies puff up and then fall flat.
  8. Make the peanut butter filling by mixing together the creamy peanut butter and powdered sugar until smooth.
  9. Spread a spoonful of the peanut butter filling onto one cookie and top with another to form a sandwich.
  10. Indulge! Enjoy warm or at room temperature.
