Simple and nostalgic peanut butter cookies that are soft, chewy, and packed with flavor.

  • 1 cup peanut butter
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) to get it nice and warm for baking your cookies.
  2. Combine the peanut butter, sugar, egg, vanilla extract, baking soda, and salt in a mixing bowl.
  3. Mix everything together until well combined, creating a thick and creamy dough.
  4. Roll the dough into small balls, about 1 inch in size, and place them on a baking sheet lined with parchment paper.
  5. Press down each ball with a fork to create a crisscross pattern.
  6. Pop the baking sheet in the oven and bake for 10-12 minutes, or until the cookies are slightly golden around the edges.
  7. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a stronger peanut flavor, use chunky peanut butter instead of creamy. Adjust the sugar by substituting some with brown sugar.
