1 cup peanut butter
1 cup cooked chickpeas, mashed
1/2 cup brown sugar or coconut sugar
1/2 teaspoon vanilla extract
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chocolate chips (optional)
Instructions
Preheat the oven to 350°F (175°C).
Combine the peanut butter, mashed chickpeas, brown sugar, vanilla extract, baking soda, and salt in a mixing bowl. Mix until everything is well combined.
If you’d like to add chocolate chips, fold them into the mixture.
Scoop tablespoon-sized amounts of the dough and place them on a baking sheet lined with parchment paper.
Flatten each cookie slightly with a fork.
Bake for 10-12 minutes or until the edges are lightly golden.
Let the cookies cool before serving.
