Delicious and healthy peanut butter chickpea cookies that are gluten-free and packed with protein.

Ingredients

  • 1 cup peanut butter
  • 1 cup cooked chickpeas, mashed
  • 1/2 cup brown sugar or coconut sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the peanut butter, mashed chickpeas, brown sugar, vanilla extract, baking soda, and salt in a mixing bowl. Mix until everything is well combined.
  3. If you’d like to add chocolate chips, fold them into the mixture.
  4. Scoop tablespoon-sized amounts of the dough and place them on a baking sheet lined with parchment paper.
  5. Flatten each cookie slightly with a fork.
  6. Bake for 10-12 minutes or until the edges are lightly golden.
  7. Let the cookies cool before serving.

Notes

Experiment with different nut butters or add spices for additional flavors.
