Delicious and guilt-free cookies made with peanut butter and chickpeas for a soft and chewy treat packed with protein and fiber.

Ingredients

  • 1 cup peanut butter
  • 1 cup canned chickpeas, rinsed and drained
  • 1/2 cup brown sugar or coconut sugar
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Blend the chickpeas, peanut butter, brown sugar, maple syrup, vanilla extract, baking soda, and salt in a food processor until smooth.
  3. Add the chocolate chips if desired, mixing them into the dough.
  4. Scoop tablespoon portions of dough onto the prepared baking sheet, leaving space between each scoop.
  5. Bake for 10-12 minutes or until edges are golden brown.
  6. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store leftover cookies in an airtight container for up to a week or freeze for up to three months.
