A delicious and healthy breakfast option combining oats, fresh peaches, and creamy cheese for a warm, comforting dish.

  • 2 cups rolled oats
  • 2 cups milk (dairy or non-dairy)
  • 1/2 cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 ripe peaches, chopped
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup cream cheese, softened

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the rolled oats, milk, brown sugar, baking powder, cinnamon, and salt in a large bowl.
  3. Stir in the chopped peaches, eggs, and vanilla extract until well mixed.
  4. Pour the mixture into a greased baking dish.
  5. Dot the top with cream cheese.
  6. Bake for 30-35 minutes or until the oatmeal is set and lightly golden.
  7. Allow to cool slightly before serving.

Notes
