Delightful peach hand pies filled with sweet, juicy peaches, perfect for a snack or dessert.

Ingredients

  • 2 cups fresh peaches, peeled and diced
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 package refrigerated pie crusts
  • 1 egg (for egg wash)
  • 1 tablespoon water (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine the peaches, sugar, cornstarch, vanilla extract, and cinnamon. Mix until well combined.
  3. Roll out the pie crusts on a floured surface and cut into circles.
  4. Place a spoonful of the peach mixture on one half of each circle.
  5. Fold the other half over the filling and crimp the edges to seal.
  6. Mix the egg with water and brush the mixture over the tops of the pies.
  7. Place the pies on a baking sheet lined with parchment paper.
  8. Bake for 20-25 minutes or until golden brown.
  9. Let cool before serving.

Notes

Best served warm, optionally with vanilla ice cream, cream, or powdered sugar.
