A delightful dessert featuring the sweetness of ripe peaches combined with a flaky pastry crust, perfect for summer gatherings.

Ingredients

  • 23 ripe peaches, sliced
  • 1 pre-made pie crust or homemade pastry dough
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 egg (for egg wash)
  • 1 tablespoon butter

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mix the sliced peaches, sugar, cornstarch, cinnamon, and lemon juice.
  3. Roll out the pie crust on a baking sheet lined with parchment paper.
  4. Place the peach mixture in the center of the crust, leaving a 2-inch border.
  5. Fold the edges of the crust over the peaches, pleating as you go.
  6. Brush the crust with beaten egg and dot the filling with butter.
  7. Bake for 25-30 minutes until golden brown.
  8. Allow to cool before slicing and serving.

Notes

Serve warm or at room temperature, great with vanilla ice cream or whipped cream. Store in an airtight container for up to 2 days at room temperature or up to a week in the fridge.
