Delightful treat combining ripe peaches with a crunchy, buttery topping, perfect for summer gatherings.

Ingredients

  • 2 cups fresh peaches, sliced
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/4 cup honey
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  2. In a bowl, mix flour, oats, brown sugar, cinnamon, and salt. Pour in the melted butter and mix until crumbly. Reserve 1 cup of this mixture for the topping.
  3. Press the remaining mixture into the bottom of the prepared baking dish to form the crust.
  4. In another bowl, toss the sliced peaches with lemon juice and pour them over the crust.
  5. Sprinkle the reserved crumb mixture over the peaches.
  6. Drizzle honey over the top.
  7. Bake for 30-35 minutes, or until the topping is golden brown.
  8. Allow to cool before slicing into bars.

Notes

Best served warm or at room temperature. Can be enjoyed plain or with whipped cream or vanilla ice cream.
