A delightful and vibrant tropical treat, this homemade passion fruit curd is a versatile addition to desserts, tarts, and ice cream.

Ingredients

  • 1 cup passion fruit juice
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup unsalted butter, cubed
  • 1 tablespoon lemon juice
  • Pinch of salt

Instructions

  1. Whisk together the passion fruit juice, sugar, and eggs until well combined.
  2. Cook over medium heat, stirring constantly until the mixture thickens and coats the back of a spoon, about 8-10 minutes.
  3. Remove from heat and stir in the butter, lemon juice, and salt until the butter is fully melted and the mixture is smooth.
  4. Strain the curd through a fine-mesh sieve into a bowl to remove any solids.
  5. Let cool before using, or store in the refrigerator for up to two weeks.

Notes

Use fresh passion fruit juice for the best flavor and stir constantly while cooking to prevent curdling. Experiment by adding lime juice or coconut cream for added flavor.
