A vibrant and tangy passion fruit curd perfect for spreading on cakes, doling out on pancakes, or enjoying by the spoonful.

Ingredients

  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup unsalted butter, cubed
  • 1 tablespoon lemon juice
  • Salt to taste

Instructions

  1. Combine the passion fruit juice, sugar, and eggs in a saucepan. Whisk until smooth.
  2. Heat the mixture over medium heat, stirring constantly, until it thickens (about 10 minutes).
  3. Add the cubed butter and stir until melted.
  4. Enhance the flavor with lemon juice and a pinch of salt. Mix until smooth.
  5. Strain the curd through a fine-mesh sieve into a bowl to remove lumps.
  6. Cool to room temperature, then refrigerate until set (about 2-3 hours).
