A vibrant and creamy passion fruit curd that enhances desserts with its tangy and sweet flavor.

Ingredients

  • 4 to 6 ripe passion fruits
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup unsalted butter, cubed
  • 1 tablespoon lemon juice
  • Pinch of salt

Instructions

  1. Prepare the passion fruits by cutting them in half and scooping the pulp into a saucepan.
  2. Combine sugar, eggs, lemon juice, and a pinch of salt in the saucepan and whisk together over medium heat.
  3. Cook the mixture while stirring constantly until it thickens and coats the back of a spoon.
  4. Strain the mixture through a fine sieve to remove seeds.
  5. Add the cubed butter and stir until fully melted and incorporated.
  6. Cool and pour the curd into a jar and let it cool before refrigerating.

Notes

Store in an airtight container in the refrigerator for up to two weeks. Can freeze for longer preservation in ice cube trays.
