A delightful side dish featuring yellow squash baked with Parmesan cheese, garlic, and Italian herbs.

  • 2 medium yellow squashes
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the yellow squashes thoroughly and slice them into ¼ inch rounds.
  3. Combine olive oil, salt, pepper, garlic powder, and dried Italian herbs in a bowl.
  4. Toss the squash slices in the oil mixture until well coated.
  5. Place the squash slices on a baking sheet lined with parchment paper.
  6. Sprinkle the grated Parmesan cheese evenly over the squash.
  7. Bake for 15-20 minutes, until the squash is tender and the cheese is golden.
  8. Serve warm as a delightful side dish.

Notes

For extra crunch, broil for the last 2 minutes. Swap yellow squash for zucchini if desired.
