A comforting tomato soup recipe inspired by the classic Panera Bread blend, rich in flavors and perfect for chilly evenings.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup heavy cream
  • Croutons (for topping)
  • Grated cheese (for topping)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until it’s soft, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute, until fragrant.
  4. Pour in the crushed tomatoes and vegetable broth.
  5. Add the dried basil, salt, and black pepper. Bring the mixture to a simmer and cook for 15-20 minutes.
  6. Blend the soup until smooth and velvety using an immersion blender.
  7. Stir in the heavy cream and cook for an additional 5 minutes.
  8. Serve hot, garnished with croutons and grated cheese.

Notes

Feel free to add red pepper flakes for heat or swap heavy cream for coconut milk for a different flavor.
