A fun and delicious dessert combining pancakes and crepes with creamy filling and fresh fruit layers.

Ingredients

  • 2 cups all-purpose flour
  • 4 large eggs
  • 2 cups milk
  • 1/4 cup sugar
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1/2 cup cream cheese (softened)
  • Fruit for layering (e.g., strawberries, blueberries)

Instructions

  1. Whisk together flour, eggs, milk, sugar, melted butter, and vanilla until smooth.
  2. Heat a non-stick skillet over medium heat and lightly grease it.
  3. Pour a small amount of batter into the skillet, swirling to coat the bottom evenly.
  4. Cook for about 1-2 minutes until the edges lift easily, then flip and cook for another minute. Repeat until all batter is used, stacking the crepes on a plate.
  5. Whip heavy cream and powdered sugar until soft peaks form. Fold in softened cream cheese until smooth.
  6. Layer a crepe, spread a thin layer of filling, and repeat until all layers are stacked.
  7. Top with fresh fruit and chill in the refrigerator for at least an hour before serving.

Notes

Make the batter smooth for nice, thin crepes and allow the layers to chill for better slicing.
