Decadent Oreo Cheesecake Bars made with crunchy Oreo crust and creamy cheesecake filling, perfect for any occasion.

  • 1 1/2 cups Oreo cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 2 (8-ounce) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup Oreo cookie pieces

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking pan.
  2. Combine Oreo cookie crumbs and melted butter in a medium bowl. Press firmly into the bottom of the greased pan.
  3. Beat cream cheese, granulated sugar, and vanilla extract in a large bowl until smooth and creamy.
  4. Add eggs, one at a time, mixing well after each addition.
  5. Fold in Oreo cookie pieces gently into the cream cheese mixture.
  6. Pour the mixture over the prepared crust and bake for 30-35 minutes until the center is set but slightly jiggly.
  7. Cool at room temperature, then refrigerate for at least 2 hours before cutting into bars.

Notes

Serve chilled, possibly topped with whipped cream and crushed Oreos. Store leftovers in an airtight container in the refrigerator for 4-5 days or freeze for up to 3 months.
