A sweet and tangy onion jam that complements a variety of dishes, perfect for cheeseboards or as a glaze.

Ingredients

  • 4 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1/4 cup brown sugar
  • 1/2 cup balsamic vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 sprig fresh thyme (optional)

Instructions

  1. Heat the oil in a large skillet over medium heat until shimmering.
  2. Add the sliced onions and cook slowly, stirring occasionally, until caramelized, about 30-40 minutes.
  3. Stir in the brown sugar, balsamic vinegar, salt, and pepper.
  4. Continue to cook until the mixture thickens and resembles jam, about 15-20 minutes.
  5. Add the fresh thyme in the last few minutes of cooking.
  6. Allow the jam to cool before transferring it to jars.

Notes

Onion jam pairs well with cheese, meats, and sandwiches. Store in airtight jars for up to two weeks in the refrigerator.
