A sweet and savory onion jam perfect for adding flavor to meals or spreading on bread.

  • 4 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 cup brown sugar
  • 1/2 cup balsamic vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme (optional)

Instructions

  1. Sauté the onions: In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are soft and caramelized, about 20-30 minutes.
  2. Sweeten the mix: Once your onions are beautifully caramelized, stir in the brown sugar, balsamic vinegar, salt, pepper, and thyme. Cook to combine.
  3. Simmer to perfection: Continue to cook the mixture, stirring until it thickens and achieves a jam-like consistency, about 15-20 minutes more.
  4. Cool down: Remove from heat and allow to cool slightly.
  5. Store your masterpiece: Transfer the onion jam to sterilized jars for canning or keep it in the refrigerator for up to 2 weeks.

Notes

Try adding whiskey or port wine for deeper flavor. Customize with spices like cinnamon or crushed red pepper for a twist.
