One Pot Taco Pasta

A hearty and comforting fusion of tacos and pasta, made in one pot for easy cleanup.

Ingredients

  • 12 ounces pasta (like rotini or penne)
  • 1 pound ground beef (or turkey)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (15 ounces) diced tomatoes with green chilies
  • 4 cups beef or chicken broth
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Brown the meat: In a large pot, brown the ground beef with the diced onion and minced garlic over medium heat. Drain excess fat if necessary.
  2. Stir in the taco seasoning and cook for 1-2 minutes until fragrant.
  3. Add the pasta, diced tomatoes, and broth to the pot. Bring to a boil, then reduce heat to a simmer. Cover and cook for about 10-12 minutes, stirring occasionally.
  4. Stir in the black beans and corn. Season with salt and pepper to taste.
  5. Remove from heat and stir in the shredded cheese until melted.
  6. Serve hot, garnished with chopped cilantro.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 2 months.
