One-Pan Cowboy Butter Tortellini Steak Bites

A comforting dish that combines juicy steak, rich butter, and tender tortellini in a flavorful one-pan meal.

  • 1 1/2 lbs sirloin or ribeye steak (cut into bite-sized cubes)
  • 1 tsp Cajun seasoning (or to taste)
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and black pepper (to taste)
  • 2 tbsp olive oil
  • 6 tbsp unsalted butter
  • 4 cloves garlic (minced)
  • 1/2 tsp red pepper flakes (optional)
  • 1 tsp Dijon mustard
  • 1 lemon (juiced)
  • 2 tbsp fresh parsley (chopped)
  • 1 tbsp fresh chives (chopped)
  • 12 oz cheese tortellini (fresh or refrigerated)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup reserved pasta water

Instructions

  1. Boil the Tortellini: Bring a large pot of salted water to boil. Cook the tortellini according to package directions until al dente. Reserve 1/2 cup of the pasta water, then drain and set aside.
  2. Prepare the Steak: Pat the steak pieces dry with paper towels. Season generously with Cajun seasoning, smoked paprika, garlic powder, salt, and black pepper.
  3. Sear the Steak: Heat olive oil in a large skillet over medium-high heat. Add the steak bites, searing them for 2-3 minutes on each side until browned. Remove the steak from the skillet and let it rest.
  4. Make the Cowboy Butter Sauce: Reduce the heat to medium. Melt the butter in the same skillet. Add the minced garlic and cook until fragrant, about 1 minute. Stir in red pepper flakes (if using), Dijon mustard, and lemon juice. Toss in the fresh parsley and chives.
  5. Combine and Coat: Return the cooked tortellini and seared steak bites to the skillet. Toss everything until well coated in the cowboy butter sauce. Add the reserved pasta water as needed to reach your desired consistency. Finally, stir in the grated Parmesan until melted.
  6. Plate and Garnish: Plate the delicious mixture while hot. Garnish with extra Parmesan, a sprinkle of parsley, and a dash of Cajun seasoning. Serve immediately to enjoy the rich flavors at their peak.

Notes

Pairs well with a green salad or garlic bread. Leftovers can be stored for up to three days.
