Delicious and comforting oatmeal cookies that are chewy and wholesome, perfect for any occasion.

Ingredients

  • 1 cup rolled oats
  • 1 cup flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup raisins or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the egg and stir in the vanilla.
  4. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended.
  5. Mix in the oats and, if using, raisins or chocolate chips.
  6. Drop rounded spoonfuls of dough onto ungreased baking sheets.
  7. Bake for 10-12 minutes or until golden.
  8. Allow to cool on the baking sheet for a minute before transferring to a wire rack.

Notes

Store cookies in an airtight container for up to a week or freeze for up to three months. Use room temperature butter for easier mixing.
