Indulgent no bake mini cheesecakes featuring a rich cream cheese filling, buttery graham cracker crust, and topped with caramel, chocolate, and pecans.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • Caramel sauce (for drizzling)
  • Chocolate sauce (for drizzling)
  • Chopped pecans (for garnish)

Instructions

  1. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press this mixture firmly into the bottoms of mini cheesecake cups.
  2. In a separate bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until the mixture is smooth and creamy.
  3. In another bowl, whip the heavy cream until soft peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture until well combined.
  5. Spoon or pipe the cheesecake filling onto the prepared crusts.
  6. Cover the mini cheesecakes with plastic wrap and chill in the refrigerator for at least 2 hours.
  7. Before serving, drizzle each mini cheesecake with caramel and chocolate sauce, then sprinkle with chopped pecans.
