A delightful layered dessert of mint and chocolate that’s perfect for warm days and celebrations, especially around St. Patrick’s Day.

Ingredients

  • 24 Oreo cookies (for crust)
  • 1/4 cup butter (melted)
  • 8 oz cream cheese
  • 1 cup powdered sugar
  • 1 tsp mint extract
  • 1 cup Cool Whip or whipped topping
  • 1/4 cup milk
  • Chocolate syrup (for drizzle)

Instructions

  1. Crush the Oreo cookies in a food processor and mix with melted butter. Press the mixture into the bottom of a rectangular dish to form the crust.
  2. Beat together cream cheese, powdered sugar, and mint extract until smooth.
  3. Fold in Cool Whip until combined and then spread over the crust.
  4. Repeat the layering process with additional Cool Whip or whipped topping if desired.
  5. Drizzle chocolate syrup over the top before serving.
  6. Refrigerate until set and serve chilled.

Notes

For a festive touch, add green food coloring to the filling. Store any leftovers covered in the refrigerator for up to 4 days.
