A refreshing no-bake dessert bursting with tangy lime flavor and a crunchy coconut graham cracker crust.

  • 1/2 cup of unsweetened shredded coconut
  • 1/3 cup of sugar
  • 1/2 cup of melted butter
  • 1 cup of sweetened condensed milk
  • 1/2 cup of fresh lime juice
  • 1 tablespoon of lime zest
  • 1/4 teaspoon of salt
  • Optional: whipped cream for serving

Instructions

  1. Prepare the crust: In a mixing bowl, combine the graham cracker crumbs, shredded coconut, sugar, and melted butter. Press this mixture into the bottom of a greased 8×8-inch pan to form the crust.
  2. Make the lime filling: In a separate bowl, whisk together the sweetened condensed milk, fresh lime juice, lime zest, and salt until well combined.
  3. Pour the lime mixture over the crust and spread evenly, ensuring every corner is covered.
  4. Chill to firm: Refrigerate for at least 120 minutes, or until firm, allowing those flavors to meld beautifully together.
  5. Cut and serve: Cut into bars and serve chilled, optionally topped with whipped cream for that extra touch of decadence.

Notes

For best results, ensure the bars are properly chilled before cutting. Leftovers can be stored in an airtight container in the refrigerator for 3-5 days.
