A light and luscious Greek yogurt jello cheesecake that’s creamy yet airy, perfect for any occasion.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 cups Greek yogurt
  • 1 package gelatin powder (85g)
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream (whipped)

Instructions

  1. Prepare the crust by combining graham cracker crumbs with melted butter and pressing into a springform pan.
  2. Bloom the gelatin by sprinkling it over cold water and letting it sit for 5 minutes.
  3. Mix the yogurt filling by combining Greek yogurt, granulated sugar, and vanilla until smooth.
  4. Heat the bloomed gelatin in the microwave until melted but not boiling.
  5. Combine the gelatin with the yogurt mixture while stirring continuously.
  6. Fold in the whipped cream to retain air in the mixture.
  7. Assemble the cheesecake by pouring the filling over the crust.
  8. Chill the cheesecake for at least 4 hours until fully set.
  9. Serve chilled, garnished with fresh fruit or sauce if desired.

Notes

A great option for gatherings, play around with flavors by adding fruit purees or using different cookie bases for the crust.
