A quick and easy no-bake cookie recipe that combines chewy oats and rich chocolatey goodness, perfect for any sweet craving.

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter (or a butter substitute)
  • 1/2 cup milk
  • 3 cups quick-cooking oats
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions

  1. Combine the granulated sugar and unsweetened cocoa powder in a medium saucepan over medium heat.
  2. Add the unsalted butter and milk, stirring gently until the butter has melted completely.
  3. Bring the mixture to a rolling boil, allowing it to boil for exactly one minute.
  4. Remove from heat and quickly stir in the quick-cooking oats, salt, and vanilla extract until well combined.
  5. Drop spoonfuls of the mixture onto a parchment-lined baking sheet.
  6. Allow to cool at room temperature until set, about 30 minutes.

Notes

For a chocolate-peanut butter version, add a tablespoon of peanut butter. These cookies can be stored in an airtight container for up to a week at room temperature or two weeks in the fridge.
