A delightful no-bake cheesecake with a creamy filling and a crunchy graham cracker crust.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup heavy cream
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • Zest of 1 lemon

Instructions

  1. Create the Graham Cracker Crust: In a bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Refrigerate while preparing the filling.
  2. Whip the Heavy Cream: In a large mixing bowl, whip the heavy cream until soft peaks form.
  3. Prepare the Cream Cheese Mixture: In another bowl, beat the cream cheese until smooth. Gradually add the powdered sugar, vanilla extract, lemon juice, and lemon zest until well combined.
  4. Combine the Mixtures: Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  5. Assemble the Cheesecake: Pour the filling over the chilled crust and smooth the top.
  6. Chill Until Set: Refrigerate for at least 240 minutes (or until set) before serving.
  7. Finish with Garnish: Optionally, garnish with fresh berries or lemon slices before serving.

Notes

Store any leftovers covered in the refrigerator for up to 3 days. Can be frozen for up to a month.
