Delicious no-bake carrot cake bites that are easy to make and guilt-free, perfect for any season.

Ingredients

  • 1/2 cup creamy almond butter
  • 1/4 cup maple syrup (or honey)
  • 1 1/4 cups oat flour
  • 1/2 cup shredded carrots
  • 1/2 cup white chocolate chips (optional)
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground ginger

Instructions

  1. Combine the Wet Ingredients: In a large mixing bowl, combine maple syrup, almond butter, cinnamon, ground ginger, and nutmeg until smooth.
  2. Stir in the Dry Ingredients: Add oat flour and shredded carrots, stirring until fully incorporated.
  3. Roll into Bites: Using a cookie scoop or tablespoon, roll mixture into bite-sized balls and place on a lined baking sheet.
  4. Freeze While Melting Chocolate: Pop the baking sheet in the freezer and melt white chocolate in 30-second intervals until silky.
  5. Dip & Set: Dip each ball into melted white chocolate and return to the baking sheet to freeze briefly.

Notes

Store bites in a sealed container in the refrigerator for up to a week, or in the freezer for up to three months.
