A healthy and refreshing protein-packed ice cream version of lemon cheesecake that balances indulgence with wholesome ingredients.

Ingredients

  • 2 cups cottage cheese
  • 1/2 cup Greek yogurt
  • 1/4 cup lemon juice
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp lemon zest
  • 1 scoop protein powder (vanilla or unflavored)
  • Pinch of salt

Instructions

  1. Blend the cottage cheese, Greek yogurt, lemon juice, honey (or maple syrup), vanilla extract, lemon zest, protein powder, and a pinch of salt until smooth.
  2. Pour the blended mixture into a Ninja Creami pint container and freeze for at least 24 hours.
  3. Process the ice cream using the Ninja Creami according to the manufacturer’s instructions.
  4. Serve immediately or refreeze for a firmer consistency.

Notes

For super creamy texture, use full-fat cottage cheese and yogurt. You can try different sweeteners or flavor variations.
