A delicious twist on a classic Italian dish, featuring crispy eggplant, rich marinara sauce, and gooey cheese.

  • 2 large eggplants, sliced
  • 2 cups breadcrumbs
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 3 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • Olive oil for frying
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the sliced eggplant with salt and let it sit for 30 minutes to draw out moisture. Pat dry.
  3. Set up a breading station with flour, beaten eggs, and breadcrumbs.
  4. Dip each eggplant slice in flour, then egg, and finally coat with breadcrumbs.
  5. Heat olive oil in a large skillet over medium heat and fry the breaded eggplant slices until golden brown on both sides.
  6. In a baking dish, spread a layer of marinara sauce, then add a layer of fried eggplant, followed by a layer of mozzarella and Parmesan cheese. Repeat the layers until all ingredients are used, finishing with cheese on top.
  7. Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and golden.
  8. Let cool for a few minutes before serving. Garnish with fresh basil if desired.

Notes

Choose firm eggplants to avoid bitterness. Consider baking the eggplant for a healthier version. Optional variations include adding layers of spinach or sautéed mushrooms.
