Delicious bite-sized mini cheesecakes with a creamy filling and tart blackberries.

Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 cup fresh blackberries

Instructions

  1. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of mini cheesecake cups.
  2. In a separate bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  3. In another bowl, whip heavy cream until stiff peaks form.
  4. Gently fold whipped cream into the cream cheese mixture.
  5. Spoon the cheesecake mixture over the crust in the cups.
  6. Top with fresh blackberries.
  7. Refrigerate for at least 180 minutes or until set.
  8. Serve chilled.

Notes

Make sure the cream cheese is softened to room temperature to avoid lumps in your filling. Experiment with different fruits for variation.
