A decadent dessert combining rich cream cheese, sweet caramel, and dark chocolate, perfect for special occasions.

Ingredients

  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 300g cream cheese
  • 200ml double cream
  • 100g icing sugar
  • 200g caramel sauce
  • 100g dark chocolate, melted

Instructions

  1. Preheat the oven to 160°C (320°F).
  2. Crush the digestive biscuits into fine crumbs and mix with melted butter to form the base. Press firmly into the bottom of a springform cake tin.
  3. Beat the cream cheese and icing sugar until smooth.
  4. Whip the double cream until soft peaks form, then fold it into the cream cheese mixture.
  5. Pour the cream cheese filling over the biscuit base and smooth it out.
  6. Drizzle caramel sauce over the cheesecake filling.
  7. Bake in the preheated oven for 40-50 minutes until set but slightly wobbly in the center.
  8. Remove from the oven and allow to cool to room temperature, then refrigerate for at least 4 hours or overnight.
  9. Before serving, drizzle melted chocolate over the top and add more caramel if desired.

Notes

Serve chilled, cut into slices. Add extra caramel or chocolate drizzle on top for a special touch.
