A fresh and satisfying twist on traditional egg salad, featuring creamy avocado and Mediterranean flavors.

Ingredients

  • 2 ripe avocados
  • 4 hard-boiled eggs, chopped
  • 1 tablespoon lemon juice
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup cherry tomatoes, halved
  • Salt and pepper to taste

Instructions

  1. Mash the avocados in a large bowl until smooth.
  2. Add the chopped hard-boiled eggs and gently fold them in.
  3. Stir in the lemon juice, diced red onion, chopped parsley, cherry tomatoes, salt, and pepper.
  4. Serve immediately or refrigerate for up to an hour before serving.

Notes

Best enjoyed fresh. If needed, store in the refrigerator for up to 24 hours but beware avocado may brown.
