  • 1/2 cup all-purpose flour
  • 1/2 cup coconut sugar
  • 2 tablespoons matcha powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together almond flour, all-purpose flour, coconut sugar, matcha powder, baking soda, and salt.
  3. Combine melted coconut oil, maple syrup, and vanilla extract in a bowl.
  4. Merge the wet ingredients with the dry ingredients until a dough forms.
  5. Portion tablespoons of dough onto the baking sheet, spacing evenly.
  6. Bake for 10-12 minutes, until edges are lightly golden.
  7. Cool on baking sheet for a few minutes before transferring to wire rack.

Notes

For a gluten-free version, use almond flour exclusively. Store cookies in an airtight container for up to one week.
