A nutritious salad featuring massaged kale, perfect as a side or light main course.

Ingredients

Scale
  • 1 bunch kale
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Optional toppings: cherry tomatoes, cucumber, avocado, nuts, seeds

Instructions

  1. Remove the leaves from the kale stems and tear into bite-sized pieces.
  2. In a large bowl, drizzle the olive oil and lemon juice over the kale.
  3. Massage the kale with your hands for about 2-3 minutes until it softens.
  4. Season with salt and pepper to taste.
  5. Add your choice of optional toppings.
  6. Serve immediately or let it sit for a bit to enhance the flavors.

Notes

Store leftovers in an airtight container. Best enjoyed fresh, but can last up to two days.
