  • 2 boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. Heat olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper and cook until browned and cooked through, about 6-7 minutes per side. Remove chicken and let it rest.
  3. Add minced garlic and sun-dried tomatoes to the same skillet, cooking for 1-2 minutes until fragrant.
  4. Pour in the heavy cream, stirring gently, then add Parmesan cheese until melted and the sauce thickens.
  5. Slice the cooked chicken and add it back into the skillet along with the cooked pasta. Mix until well combined in the creamy sauce.
