Ingredients

  • 200 grams feta cheese, cut into cubes
  • 3 cloves garlic, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon freshly ground black pepper
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

Instructions

  1. Create the flavorful marinade: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, sliced garlic, dried oregano, crushed red pepper flakes, and freshly ground black pepper to form a smooth marinade.
  2. Prepare the olives and feta: Place the mixed olives and the freshly cubed feta cheese in a medium-sized airtight container.
  3. Marinate perfectly: Pour the marinade evenly over the olives and feta, ensuring each piece is generously coated.
  4. Refrigerate and allow to marinate: Seal the container tightly and refrigerate for at least 2 hours, preferably overnight.
  5. Serve and enjoy: Remove from the refrigerator 20 minutes before serving, gently stir to redistribute the marinade, then dig in!

Notes

For best flavor, marinate overnight. Serve with crusty bread or pita chips.
