Marinated Cucumbers, Onions, and Tomatoes

A refreshing summer salad of marinated cucumbers, onions, and tomatoes, perfect for picnics and gatherings.

Ingredients

  • 2 cucumbers, thinly sliced
  • 1 pint cherry or grape tomatoes, halved
  • 1 small red or white onion, thinly sliced
  • 1/4 cup apple cider vinegar (or red wine vinegar)
  • 2 tbsp extra virgin olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Optional: 1/2 tsp red pepper flakes

Instructions

  1. Wash and slice the vegetables. Start by giving the cucumbers a good rinse under cool water. Then, thinly slice them and place them in a large mixing bowl. Halve the cherry or grape tomatoes and add them to the bowl along with the thinly sliced onion.
  2. Prepare the marinade. In a separate mixing bowl, whisk together the apple cider vinegar, extra virgin olive oil, minced garlic, salt, pepper, and red pepper flakes (if using).
  3. Combine under the flavorful shower. Pour the marinade over the sliced vegetables in the large bowl and gently toss to coat the veggies well.
  4. Chill and let the flavors meld. Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes.
  5. Serve and enjoy. After letting it chill, give it one final toss before serving. Serve chilled and watch your friends and family dive in!

Notes

For extra crunch, consider adding sliced radishes or bell peppers. You can also customize the recipe with different herbs or by adding chickpeas for protein.
