A delightful side dish that combines the natural sweetness of carrots with the tangy flavor of Dijon mustard and maple syrup.

Ingredients

  • 1 pound carrots, peeled and cut into sticks
  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Whisk together the maple syrup, Dijon mustard, olive oil, salt, and pepper in a large bowl.
  3. Add the carrot sticks to the bowl and toss until they are evenly coated.
  4. Spread the carrots in a single layer on a baking sheet.
  5. Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and caramelized, stirring halfway through.
  6. Remove from the oven and garnish with fresh parsley if desired. Serve warm.

Notes

Cut the carrots into similar sizes for even roasting. Feel free to adjust the amount of maple syrup or Dijon mustard to suit your taste.
