A delightful dessert featuring the sweetness of ripe mangoes combined with creamy coconut milk and sticky rice.

Ingredients

  • 1 cup glutinous rice
  • 1 1/2 cups coconut milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 2 ripe mangoes, peeled and sliced
  • Sesame seeds or mung beans for garnish (optional)

Instructions

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in fresh water for at least 4 hours.
  2. Drain the rice and steam it for about 20-30 minutes until tender and sticky.
  3. Combine coconut milk, sugar, and salt in a saucepan over low heat until sugar dissolves.
  4. Mix 1 cup of the warm coconut milk mixture with the steamed rice and let it sit for 30 minutes.
  5. Serve by placing a portion of sticky rice on a plate, topping with mango slices, and drizzling with coconut milk. Garnish if desired.

Notes

Pairs well with grilled chicken or shrimp. Can be stored in the refrigerator for 2-3 days.
