A delightful treat combining the chewy texture of mochi with the sweetness of ripe mango, this vegan and gluten-free dessert is easy to prepare and perfect for any occasion.

Ingredients

  • 1 cup sweet rice flour (mochi flour)
  • 1/4 cup sugar
  • 1 cup water
  • 1 ripe mango, pureed
  • Cornstarch for dusting

Instructions

  1. Combine the dry ingredients in a bowl, mixing sweet rice flour and sugar until incorporated.
  2. Gradually add in the water while stirring for a smooth consistency.
  3. Microwave the mixture in a covered bowl for 2-3 minutes, stirring halfway through until thick and sticky.
  4. Incorporate mango puree into the mixture, letting the aroma fill the kitchen.
  5. Shape the mochi dough into small balls or squares on a cornstarch-dusted surface.
  6. Dust each piece with more cornstarch to prevent sticking.
  7. Chill and serve either chilled or at room temperature.

Notes

Measure accurately for the best results and use fresh mango for enhanced flavor. Store leftovers in an airtight container for up to 2 days.
