Delightful mango mochi with a chewy texture and refreshing tropical flavor, perfect for summer.

Ingredients

  • 1 cup mochiko (sweet rice flour)
  • 1/2 cup sugar
  • 1 cup water
  • 1 teaspoon cornstarch (for dusting)
  • 1 ripe mango, pureed

Instructions

  1. Mix mochiko and sugar in a bowl. Add water and stir until smooth.
  2. Microwave the mixture for about 1 minute, stir, and microwave for another minute. Repeat until sticky and translucent.
  3. Pour the mixture onto a cornstarch-dusted surface.
  4. Allow it to cool slightly before shaping into small rounds.
  5. Place a small spoonful of mango puree inside each mochi and seal.
  6. Dust with cornstarch to prevent sticking.
  7. Chill before serving to enhance the flavors and texture.

Notes

Serve with fresh fruit or whipped cream, and enjoy with green tea. Best eaten fresh but can be stored in the fridge for up to 3 days.
