Delightful mango mochi with a soft, chewy exterior and a sweet, fruity center, perfect for any occasion.

Ingredients

  • 1 cup mochiko (sweet rice flour)
  • 1/2 cup sugar
  • 1 cup water
  • 1 ripe mango, diced
  • Cornstarch (for dusting)

Instructions

  1. Combine mochiko and sugar in a mixing bowl, creating a base for the mochi texture.
  2. Gradually add water while stirring until well mixed for a smooth consistency.
  3. Pour the mochi mixture into a microwave-safe dish, spreading it evenly.
  4. Cover the dish with plastic wrap and microwave on high for 1 minute.
  5. Stir the mixture well, then microwave for another minute to achieve thick consistency.
  6. Stir once more and microwave for an additional 30 seconds to 1 minute until thick and gooey.
  7. Dust a clean surface with cornstarch and pour the mochi dough onto it.
  8. Cool slightly, then flatten the mochi with your hands.
  9. Cut the flattened mochi into squares or circles.
  10. Add diced mango in the center of each piece and gently fold over to seal.
  11. Dust with more cornstarch if necessary to prevent sticking.
  12. Serve chilled or at room temperature.

Notes

Store any leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to a week.
