Delightful mango mochi with a chewy texture and juicy mango filling, perfect for summer treats.

Ingredients

  • 1 cup glutinous rice flour
  • 1/2 cup water
  • 1/4 cup sugar
  • 1 ripe mango, diced
  • Cornstarch (for dusting)

Instructions

  1. Combine the glutinous rice flour, sugar, and water in a mixing bowl. Stir until smooth.
  2. Transfer the mixture to a microwave-safe dish, cover with plastic wrap, and microwave for 1 minute, then stir. Repeat for a total of 3-4 minutes until translucent.
  3. Dust a clean surface with cornstarch and turn the cooled mochi out onto it.
  4. Divide the mochi into small pieces and flatten each piece with your hands.
  5. Place a small amount of diced mango in the center of each flattened piece and fold over, pinching to seal.
  6. Roll the stuffed mochi in cornstarch to prevent sticking.
  7. Serve and enjoy your mango mochi!

Notes

Enjoy fresh but can be stored in an airtight container at room temperature for 1-2 days or in the fridge for up to a week. Dust with cornstarch before storing.
