Mango mochi is a delightful treat combining chewy texture with the sweetness of ripe mango. Perfect for sharing and refreshing in warm weather.

Ingredients

  • 1 cup glutinous rice flour
  • 1/4 cup sugar
  • 1/2 cup water
  • 1 ripe mango, diced
  • Cornstarch for dusting

Instructions

  1. Combine the glutinous rice flour and sugar in a mixing bowl. Gradually add the water and mix until smooth.
  2. Transfer the mixture to a microwave-safe dish and cover it with plastic wrap. Microwave on high for 1 minute.
  3. Stir, then microwave for an additional minute.
  4. Stir again, then microwave for another 30 seconds until the mixture becomes sticky and translucent.
  5. Allow the mixture to cool slightly, then dust a clean surface with cornstarch.
  6. Transfer the mochi dough onto the surface and flatten it gently.
  7. Cut into squares or circles and place a small piece of diced mango in the center of each piece.
  8. Fold the edges over to encase the mango and shape it into a ball.
  9. Dust with more cornstarch to prevent sticking.
  10. Serve immediately or store in an airtight container.

Notes

Ripe mango enhances flavor; use cornstarch on hands to avoid sticking. Experiment with different fruit fillings.
