A delightful treat combining the chewy texture of mochi with the sweet, tropical flavor of mango.

Ingredients

  • 1 cup sweet rice flour (mochi flour)
  • 1/4 cup sugar
  • 1/2 cup water
  • 1 ripe mango, pureed
  • Cornstarch or potato starch (for dusting)

Instructions

  1. In a microwave-safe bowl, mix sweet rice flour and sugar.
  2. Gradually add water while stirring to form a smooth batter.
  3. Microwave the mixture for 1 minute, stir, then microwave for another 1-2 minutes until the mochi is translucent.
  4. Let it cool slightly, then knead with cornstarch to prevent sticking.
  5. Divide into small pieces and shape into discs.
  6. Place a small amount of mango puree on each disc and fold it over to wrap the filling.
  7. Dust with more cornstarch and serve chilled or at room temperature.

Notes

Make sure your mango is ripe for the best flavor. Use cornstarch generously to avoid sticking during preparation. If the mochi gets too sticky, you can knead in more cornstarch.
