A vibrant and flavorful mango curd tart with a buttery crust and tangy lime, perfect for any occasion.

  • 1 1/2 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 teaspoon salt
  • 3 to 4 tablespoons cold water
  • 2 ripe mangos, pureed
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup fresh lime juice
  • 1/4 cup unsalted butter, softened
  • Whipped cream (for topping)
  • Fresh fruit (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the all-purpose flour, powdered sugar, and salt in a bowl.
  3. Add cold, cubed butter and blend until the mixture resembles coarse crumbs.
  4. Drizzle in the cold water, a tablespoon at a time, mixing until a dough forms.
  5. Press the dough evenly into the bottom and up the sides of a tart pan.
  6. Bake for 15 minutes or until the crust is lightly golden.
  7. Whisk together the mango puree, granulated sugar, eggs, fresh lime juice, and softened butter until smooth and creamy.
  8. Pour the mango mixture into the pre-baked crust.
  9. Bake for another 20-25 minutes, until the curd is set but still slightly wobbly in the center.
  10. Cool the tart at room temperature, then refrigerate for at least 1 hour.
  11. Serve topped with whipped cream and fresh fruit.

Notes

For an added twist, try substituting the mango with passionfruit or peach for a different flavor profile.
