Delightful bars blending the tartness of key lime with the sweetness of mango and coconut, perfect for summer.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1 (14 oz) can sweetened condensed milk
  • 1/2 cup key lime juice
  • 1/4 cup shredded coconut (for topping)
  • 1 ripe mango, pureed
  • 1 tablespoon key lime zest

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  2. Combine flour, shredded coconut, sugar, and melted butter in a mixing bowl. Press into the bottom of the prepared dish to form a crust.
  3. Bake for 15-20 minutes, until golden brown.
  4. Whisk together sweetened condensed milk, key lime juice, shredded coconut, and key lime zest in another bowl.
  5. Pour the filling over the baked crust, and bake for an additional 15-20 minutes, until set.
  6. Cool completely in the baking dish, then refrigerate for at least 2 hours.
  7. Top with mango puree before serving and slice into bars.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days or freeze for up to 2 months.
