Delicious Mango Coconut Key Lime Bars that embody the essence of summer with creamy, tart, and slightly sweet layers.

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sweetened shredded coconut
  • 1 cup cream cheese, softened
  • 1/2 cup sweetened condensed milk
  • 1/2 cup fresh key lime juice
  • Zest of 2 key limes
  • 1 cup mango puree
  • 1/4 cup sugar (optional)
  • Whipped cream (for serving, optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking dish.
  2. In a bowl, combine graham cracker crumbs and melted butter. Press this mixture into the bottom of the prepared dish. Bake for 10 minutes and then let it cool.
  3. In a mixing bowl, beat together the cream cheese, sweetened condensed milk, key lime juice, and lime zest until smooth. Pour this mixture over the cooled crust and spread it evenly.
  4. Bake for about 15-20 minutes until set. Let cool completely.
  5. Pour the mango puree over the top and spread it evenly. Chill in the refrigerator for at least 2 hours before serving.
  6. Slice the bars into squares and serve with whipped cream if desired.

Notes

For a gluten-free version, use gluten-free graham crackers or almond flour. Letting the bars chill will enhance their flavor.
